The researcher explained that to study the beneficial properties of beans and corn have made use of an animal model.
“We apply a model in which rats were induced diabetes and incorporated into your diet and whether cooked beans corn tortilla, which is how humans consume regularly. It is important to note that the diet has been calculated that the animals consumed similar percentages to the intake of the Mexican population. “
Some of the particularities of the investigation are that work is carried out with different varieties of beans grown in different regions of the country and prepared in various forms in order to identify whether their properties are lost during preparation or enhance.
The main findings of the investigation, Rose Camacho revealed that some varieties of beans lower levels of blood sugar and its potential depends on the location and time of year that has been cultivated. However, those beans that fail to reduce blood glucose do have properties that prevent some complications of diabetes such as kidney damage, or improve blood lipid levels.
